The Bark

The Pit

The cooking technique used to cook meats low and slow. Gallo’s Catering and BBQ is 100% Pit BBQ. This is what separates us from the rest of the competition. We cook low and slow with only the finest lump charcoal and wood to give our BBQ that open pit taste that electric smokers fail to deliver. This process is what gives our bark time to develop into a gorgeous crust. If you want electric smoke then do it in your own kitchen and save a couple bucks.
